This is a recipe for a sandwich that is very simple to make but tastes better than
any grilled chicken sandwich I have ever bought. What makes it different is the
suya spice that I add to the marinade. It brings out an amazing flavor in the
chicken and adds a nice spicy flavor to the meal! This is a very simple recipe but
such a play on flavors in your mouth! Enjoy!
1 Sandwich bread – (Your favorite kind, It doesn’t really matter)
2 boneless chicken breasts
1 teaspoon suya spice
(To make suya spice):
Blend – 2 tablespoon Roasted peanuts. ½tsp Pepper, pinch Salt, ½ tsp
Paprika, ¼ tsp Curry, onion powder, garlic, and ginger powder
1 tablespoon garlic mayonnaise
Cheddar or mozzarella cheese
Salt and black pepper to taste
– In a bowl, marinate the chicken breast with salt, black pepper and add suya
spice. Using your hands, rub the spice mixture well into the chicken and
allow to rest for 20 minutes covered at room temperature.
– Pre-heat oven to 350 degrees and grill the chicken for 30-45 minutes,
turning once half way through to ensure both sides are cooked and
– Cut the bread open and stack the sandwich up however way you prefer.
Toast for 1 minute if you like a toasted sandwich, voila!
